Ingredients
- 1 kg of fava beans
- 2 onions
- 2 carrots
- 2 pork ribs
- 2 garlic cloves
- 1 liter of meat broth
- 300 g of potatoes
- 1 tablespoon of chili
- Salt and pepper to taste
- Olive oil
- Chopped parsley for serving
Method
- In a large pot, heat the oil and sauté the onions and garlic until golden brown.
- Add the pork ribs and cook until well done.
- Add the cubed carrots and cook for a few minutes.
- Add the fava beans, meat broth, chili, salt, and pepper, stir well.
- Cover and simmer over low heat for about 1 hour, checking occasionally to ensure the broth doesn't dry out.
- Add the cubed potatoes and cook until soft.
- Occasionally stir and taste for seasoning, adjusting salt and pepper as needed.
- Serve hot, garnished with chopped parsley.
