Asam Laksa

A sour fish broth with spicy flavors, served with rice noodles and fresh vegetables.

Ingredients
- 300g of fish, cut into pieces
- 1 liter of fish broth
- 1 onion, chopped
- 2 garlic cloves, chopped
- 2 lemongrass stalks, sliced
- 1 sweet tamarind juice
- 1 tablespoon of dried chili
- 1 tablespoon of chili paste
- 500g of rice vermicelli
- 200g of vegetables (zucchini, bell peppers, onions, basil)
- 1 tablespoon of coconut oil
- Salt and pepper to taste
Method
- In a pot, sauté the garlic and onion in coconut oil.
- Add the fish and fish broth, bring to a boil and cook for 15 minutes.
- Add the lemongrass and dried chili, cook for another 5 minutes.
- While the fish broth is cooking, heat the tamarind and chili in another pot.
- Serve the fish broth in bowls, add the rice vermicelli and vegetables.
- Pour the tamarind and chili mixture over the broth, stir well.
- Place the vegetables on top of the broth and serve immediately.

Asam Laksa originates from Penang, a region rich in cultural and culinary diversity. Its history dates back to the times when Indonesian sailors and fisherfolk brought their recipes with them.
