Ingredients

  • 4 apples
  • 250 g of flour
  • 150 g of sugar
  • 100 g of butter
  • 1 egg
  • 1 teaspoon of cinnamon powder
  • 1 teaspoon of vanilla powder
  • 100 g of ground almonds
  • 1 packet of baking powder
  • 100 g of pulled sugar
  • Flour for frying

Method

  1. Wash and slice the apples into thin pieces.
  2. In a bowl, mix the flour, sugar, cinnamon, vanilla, and baking powder.
  3. Add the butter, egg, and mix until a homogeneous dough is formed.
  4. Dust the edges of a baking dish with the dough and place the apple slices on top.
  5. Cover with the remaining dough and bake at medium heat for about 30 minutes.
  6. Make the pulled sugar by wetting the edges with water and wrapping with kitchen paper.
  7. Fry the pulled sugar in a bowl with oil until it hardens.
  8. Arrange the pulled sugar around the tart just out of the oven.

Originating from the surrounding countryside of Arequipa, the Arequipeña Ocopa was traditionally prepared by farmers using the region's sweet and delicious apples.
