Ingredients

  • 4 apples
  • 2 onions
  • 1 zucchini
  • 1 green bell pepper
  • 1 liter of vegetable broth
  • 1 tablespoon of wine vinegar
  • salt and pepper to taste
  • 2 tablespoons of extra virgin olive oil
  • 1 tablespoon of sugar
  • 100g of toasted bread slices
  • 1 tablespoon of fresh mint, chopped

Method

  1. Clean and cut the apples, onions, zucchini, and green bell pepper into cubes.
  2. In a pan, heat the oil and sauté the onions until they become golden brown.
  3. Add the apple, zucchini, and bell pepper cubes, sauté for 5 minutes.
  4. Pour in the vegetable broth, bring to a boil, and cook for 20 minutes.
  5. Add the wine vinegar, salt, and pepper, stir well, and let it cool down.
  6. On a plate, place the toasted bread slices, pour the soup over, and garnish with mint.
  7. Serve immediately, accompanied by a bit of sugar for the final touch.

The story

Apple ciorbă is a traditional soup from Romania, particularly popular in Bucharest. Originally made with wild apples, today it is usually prepared with a sweet apple variety.
