Apple Ciorbă

A fresh and delicious soup, typical of Romania, made with apples and vegetables.

Ingredients
- 4 apples
- 2 onions
- 1 zucchini
- 1 green bell pepper
- 1 liter of vegetable broth
- 1 tablespoon of wine vinegar
- salt and pepper to taste
- 2 tablespoons of extra virgin olive oil
- 1 tablespoon of sugar
- 100g of toasted bread slices
- 1 tablespoon of fresh mint, chopped
Method
- Clean and cut the apples, onions, zucchini, and green bell pepper into cubes.
- In a pan, heat the oil and sauté the onions until they become golden brown.
- Add the apple, zucchini, and bell pepper cubes, sauté for 5 minutes.
- Pour in the vegetable broth, bring to a boil, and cook for 20 minutes.
- Add the wine vinegar, salt, and pepper, stir well, and let it cool down.
- On a plate, place the toasted bread slices, pour the soup over, and garnish with mint.
- Serve immediately, accompanied by a bit of sugar for the final touch.
The story
Apple ciorbă is a traditional soup from Romania, particularly popular in Bucharest. Originally made with wild apples, today it is usually prepared with a sweet apple variety.
