Ingredients

  • 400 g beef short ribs
  • 2 onions
  • 1 chili pepper
  • 1 tablespoon chili powder
  • 1 tablespoon balsamic vinegar
  • 1 tablespoon sofrito sauce
  • 1 tablespoon vegetable oil
  • Salt to taste
  • 12 skewers for the grill

Method

  1. Cut the beef short ribs into pieces about 5 cm long.
  2. Rinse and dry them well.
  3. In a cup, mix the balsamic vinegar, sofrito sauce, chili powder, and vegetable oil.
  4. Add the short ribs and mix well to coat them well.
  5. Let them marinate in the refrigerator for at least 2 hours.
  6. Clean the peppers and cut them into slices.
  7. Preheat the grill and brush it with oil and pepper.
  8. Place the short ribs on the grill, add the peppers, and grill for 15-20 minutes, turning frequently.
  9. Serve them hot with a good chili sauce.

The story

Anticuchos originated in Lima and have spread throughout Peru and the world. It is said that they were introduced by Spanish sailors who used beef short ribs as a way to preserve food.
