Ingredients

  • 500 grams of Andria Pecorino
  • 200 grams of dried tomatoes
  • 100 grams of black olives
  • 50 grams of parsley
  • 2 onions
  • 1 lemon
  • Extra virgin olive oil
  • Salt and pepper

Method

  1. Take the Andria Pecorino and cut it into thin slices.
  2. In a pan, sauté finely chopped onions in a bit of extra virgin olive oil.
  3. Add the dried tomatoes and black olives, stirring well.
  4. Place pecorino slices on a baking tray, initially with the softer side facing down.
  5. Layer the pecorino with the onion, tomato, and olive mixture.
  6. Sprinkle with salt, pepper, and lemon juice.
  7. Bake in the oven at 180 degrees for 15-20 minutes, until the cheese has melted.
  8. Serve hot as an appetizer.

The story

The Andria Pecorino has a history dating back to the 17th century, when the farmers of Basilicata started producing this cheese with local sheep.
