A delightful antipasto with Andria Pecorino, a traditional cheese from Basilicata.

Ingredients
- 500 grams of Andria Pecorino
- 200 grams of dried tomatoes
- 100 grams of black olives
- 50 grams of parsley
- 2 onions
- 1 lemon
- Extra virgin olive oil
- Salt and pepper
Method
- Take the Andria Pecorino and cut it into thin slices.
- In a pan, sauté finely chopped onions in a bit of extra virgin olive oil.
- Add the dried tomatoes and black olives, stirring well.
- Place pecorino slices on a baking tray, initially with the softer side facing down.
- Layer the pecorino with the onion, tomato, and olive mixture.
- Sprinkle with salt, pepper, and lemon juice.
- Bake in the oven at 180 degrees for 15-20 minutes, until the cheese has melted.
- Serve hot as an appetizer.
The story
The Andria Pecorino has a history dating back to the 17th century, when the farmers of Basilicata started producing this cheese with local sheep.
