Alghero's Chicken

A classic Alghero dish, Su Gallurese is a delicious piperata sauce that pairs perfectly with chicken.

Ingredients
- 4 chickens, cut into pieces
- 100 g of pancetta, cut into cubes
- 2 onions, sliced
- 200 g of dried tomatoes, cooked and chopped
- 100 ml of extra virgin olive oil
- 50 g of chopped parsley
- 100 g of cooked chickpeas
- Salt and pepper to taste
- 2 garlic cloves, crushed
Method
- In a pan, fry the pancetta in a bit of olive oil.
- Add the sliced onions and crushed garlic, sauté for a few minutes.
- Add the chicken pieces, season with salt and pepper, and cook over medium heat for 15-20 minutes.
- Add the cooked dried tomatoes and chickpeas, stir well and cook for another 10-15 minutes.
- Finally, add the parsley and gently stir.
- Serve hot, accompanied by bread or a plate of rice.
The story
Su Gallurese is a traditional Alghero dish, a city with a strong Catalan influence in the region of Sardinia. The name of the dish comes from the Catalan term 'gall', meaning 'chicken', and 'urese', which indicates a sauce.
