A classic Alghero dish, Su Gallurese is a delicious piperata sauce that pairs perfectly with chicken.

Ingredients

  • 4 chickens, cut into pieces
  • 100 g of pancetta, cut into cubes
  • 2 onions, sliced
  • 200 g of dried tomatoes, cooked and chopped
  • 100 ml of extra virgin olive oil
  • 50 g of chopped parsley
  • 100 g of cooked chickpeas
  • Salt and pepper to taste
  • 2 garlic cloves, crushed

Method

  1. In a pan, fry the pancetta in a bit of olive oil.
  2. Add the sliced onions and crushed garlic, sauté for a few minutes.
  3. Add the chicken pieces, season with salt and pepper, and cook over medium heat for 15-20 minutes.
  4. Add the cooked dried tomatoes and chickpeas, stir well and cook for another 10-15 minutes.
  5. Finally, add the parsley and gently stir.
  6. Serve hot, accompanied by bread or a plate of rice.

The story

Su Gallurese is a traditional Alghero dish, a city with a strong Catalan influence in the region of Sardinia. The name of the dish comes from the Catalan term 'gall', meaning 'chicken', and 'urese', which indicates a sauce.
