Ingredients

  • 200g of beef
  • 100g of zucchini
  • 1 onion
  • 100g of toasted bread
  • 2 eggs
  • 1 tablespoon of ginger
  • 1 tablespoon of chopped parsley
  • 1/2 teaspoon of black pepper
  • 1/2 teaspoon of salt
  • oil for frying
  • 100g of sweet potatoes
  • 200ml of beef broth

Method

  1. Clean and dice the onion and zucchini into small pieces.
  2. In a bowl, mix the beef, crumbled toasted bread, eggs, ginger, parsley, pepper, and salt.
  3. Add the diced onion, zucchini, and sweet potatoes, mixing well.
  4. Form the meatballs by hand, ensuring they are uniform in size.
  5. Fry the meatballs in plenty of hot oil for about 3-4 minutes, until golden brown.
  6. Remove from the pan and drain on paper towels.
  7. In a saucepan, pour the beef broth and bring to a boil.
  8. Add the meatballs and cook for another 5-7 minutes, until they are cooked through.
  9. Serve hot with a bit of broth on top.

Albondigas originated in Asia Minor and spread throughout Europe, becoming a popular dish in Spain.
