Ingredients

  • 4 white fish fillets (such as cod or carp)
  • 200 grams of shrimp
  • 100 grams of mussels
  • 2 onions
  • 2 ripe tomatoes
  • 2 carrots
  • 2 garlic cloves
  • 1 lemon
  • 1 liter of fish broth
  • 200 ml of olive oil
  • salt and pepper to taste
  • African pepper preparation (optional)

Method

  1. In a large pot, heat the olive oil and sauté the onions, garlic, and carrots until golden brown.
  2. Add the diced tomatoes and cook for 5 minutes.
  3. In a separate bowl, mix the fish broth with lemon juice and a bit of salt.
  4. Add the fish fillets and shrimp to the pot with the sautéed mixture and cook for 5-7 minutes.
  5. Add the mussels to the pot and cook for another 3-5 minutes until they open.
  6. Add the fish broth-lemon juice-salt mixture and let it boil for 10 minutes.
  7. Taste and add salt and pepper to taste. If desired, add the African pepper preparation.
  8. Serve hot, drizzled with a bit of olive oil and a sprinkle of salt on the plate.

The story

African bouillabaisse is a local variation of this famous dish from Dakar, keeping the essence of the traditional Provençal dish but adding a local twist to it.
