Açorda with Sardines

A traditional Alentejo dish, Açorda with Sardines is a hearty soup of crispy bread and flavorful sardines.

Ingredients
- 400 g of whole wheat bread
- 200 g of sardines
- 200 ml of extra virgin olive oil
- 1 onion
- 200 ml of water
- 1 tablespoon of salt
- 100 ml of vinegar
- 100 g of turnip greens
- 100 g of parsley
- Pepper in grains
Method
- Cut the bread into pieces about 2 cm thick and sauté in olive oil in a pan for 5-10 minutes over medium heat.
- Mix the oil with the bread and cook for another 5 minutes, stirring frequently.
- Drain the sardines and cut them into pieces.
- In a pot, mix the oil with the bread, sardines, water, salt, vinegar, and turnip greens. Bring to a boil and cook for 10 minutes.
- Add the vegetables and parsley, stir well and cook for another 5 minutes.
- Spoon the Açorda into bowls and season with pepper in grains.
The story
Açorda with Sardines is an ancient recipe dating back to medieval times, when sardines were a cheap and abundant food in the Mediterranean.
