Acarajé

A colorful and crunchy appetizer, traditional from Salvador, in Northern Brazil.

Ingredients
- 200 g of chickpea flour
- 200 g of corn flour
- 1 liter of palm oil
- 100 g of anchovies
- 500 g of dried beans
- 100 g of zucchini
- 100 g of onion
- 100 g of bell peppers
- 100 g of red onion
- 100 g of ginger
- 50 g of lemon
- Salt and pepper to taste
Method
- In a bowl, mix the chickpea flour and corn flour.
- In a pan, heat the palm oil over medium-high heat.
- Form small balls of the flour mixture and drop them into the hot oil, cooking until they puff up.
- In another pan, cook the anchovies with the vegetables and ginger.
- Drain the beans and mix them with the vegetables and anchovies.
- Cut the acarajé balls in half and stuff them with the bean mixture.
- Serve hot, sprinkled with salt and pepper.
