Ingredients

  • 250 g of barley
  • 1 liter of water
  • 2 eggs
  • 100 g of sausages
  • 100 g of mushrooms
  • 1 onion
  • 1 clove of garlic
  • 1 mint leaf
  • Salt and pepper to taste
  • 1 tablespoon of butter

Method

  1. In a pot, combine the barley with water and bring to a boil. Reduce heat and let it simmer for 2 hours.
  2. Meanwhile, slice the onion and mushrooms thinly.
  3. In a pan, sauté the onion in butter.
  4. Add the sliced mushrooms and cook for 5 minutes.
  5. Slice the sausages and mix them with the barley broth.
  6. Add the mint and garlic clove to the broth.
  7. Bring to a boil and cook for 10 minutes.
  8. In a bowl, gently beat the eggs in cold water for 5 minutes.
  9. Serve the hot broth with the eggs, sausages, and mushrooms on top.
