Zuger Mirrored Eggs
A classic of Swiss cuisine, Zuger Mirrored Eggs are fried eggs in a lemon and honey sauce, served cold on a wooden board.

Ingredients
- 8 eggs
- 100 ml lemon juice
- 50 g cane sugar
- 30 ml olive oil
- Salt to taste
- Pepper to taste
- 1 bay leaf
- 1 tablespoon honey
- 2 slices of toasted bread
- 1 tablespoon butter
- 100 g grated cheese
Method
- In a saucepan, mix the lemon juice, cane sugar, salt, and pepper. Add the bay leaf and bring to a boil.
- Meanwhile, toast the bread slices in a pan with butter.
- In a second pan, fry the eggs one at a time in a bit of olive oil.
- As soon as the eggs are done, quickly dip them in the lemon and sugar sauce to make them reflect like a mirror.
- Serve the eggs on a wooden board with the toasted bread and grated cheese.
- Sprinkle with a bit of honey before serving for an extra touch.
