Ingredients

  • 8 eggs
  • 100 ml lemon juice
  • 50 g cane sugar
  • 30 ml olive oil
  • Salt to taste
  • Pepper to taste
  • 1 bay leaf
  • 1 tablespoon honey
  • 2 slices of toasted bread
  • 1 tablespoon butter
  • 100 g grated cheese

Method

  1. In a saucepan, mix the lemon juice, cane sugar, salt, and pepper. Add the bay leaf and bring to a boil.
  2. Meanwhile, toast the bread slices in a pan with butter.
  3. In a second pan, fry the eggs one at a time in a bit of olive oil.
  4. As soon as the eggs are done, quickly dip them in the lemon and sugar sauce to make them reflect like a mirror.
  5. Serve the eggs on a wooden board with the toasted bread and grated cheese.
  6. Sprinkle with a bit of honey before serving for an extra touch.
