A classic Polish dish, zapiekanka is a grilled bread topped with cheese and various toppings.

Ingredients
- 240 g of grilled bread slices
- 150 g of shredded gruyère cheese
- 100 g of grated cheese
- 1 onion
- 200 g of mushrooms
- 2 eggs
- 200 ml of chicken broth
- 2 tablespoons of oil
- Salt and pepper to taste
- 100 g of bacon
- Balsamic vinegar to taste
Method
- Prepare the bread: cut the bread slices into quarters and fry in oil until crispy.
- Prepare the mushrooms: slice the onion and mushrooms thinly.
- In a pan, sauté the onion and mushrooms in oil until golden brown.
- In a bowl, mix the eggs, chicken broth, salt, and pepper.
- Add the crispy bread to the pan with the onions and mushrooms, then pour the egg mixture.
- Grill over medium heat until the cheese melts and the surface becomes golden brown.
- Serve hot, garnished with bacon bits and balsamic vinegar to taste.
The story
Originating in Kraków, the zapiekanka became popular in the 1960s as a quick and convenient meal.
