Xeebo is a traditional millet beer from Saint-Louis, Senegal, with a slightly sweet and slightly alcoholic taste.

Ingredients
- 200 grams of millet
- 2 liters of water
- 1 tablespoon of sugar
- 1 lemon leaf
- 1 tablespoon of saffron
- 1 clove
- 1/2 teaspoon of salt
- 100 grams of cane sugar
- Water for serving
Method
- Rinse the millet and let it soak for 2 hours.
- Bring water and millet to a boil, reduce heat and cook for 30 minutes.
- Add sugar, salt, clove, and saffron, stir and cook for another 10 minutes.
- Let the mixture cool, add lemon and cane sugar, stir well.
- Let it ferment for 24 hours at room temperature.
- Filter the beer and serve cold in glasses.
- Serving suggestion: enjoy it with some snacks or pastries.
