Ingredients

  • 800 g of pappardelle
  • 500 g of wild boar meat in pieces
  • 2 onions
  • 2 carrots
  • 2 celery stalks
  • 2 cloves of garlic
  • 200 ml of olive oil
  • 1 liter of meat broth
  • 100 g of beans
  • salt and pepper
  • 100 g of chopped parsley
  • 100 g of butter

Method

  1. In a large pot, sauté the wild boar meat with olive oil and garlic until well cooked.
  2. Add the onions, carrots, and celery, and cook for 10 minutes.
  3. In another pot, bring the meat broth to a boil and then add the beans.
  4. In a separate pan, cook the pappardelle until al dente.
  5. While the pasta is cooking, mix the bean broth with butter and parsley.
  6. Combine the pasta with the meat and broth, and stir well.
  7. Serve hot, seasoned with salt and pepper to taste.
