Wild Boar Pappardelle

A delicious wild boar pasta, a traditional dish from the city of Fermo in Marche.

Ingredients
- 800 g of pappardelle
- 500 g of wild boar meat in pieces
- 2 onions
- 2 carrots
- 2 celery stalks
- 2 cloves of garlic
- 200 ml of olive oil
- 1 liter of meat broth
- 100 g of beans
- salt and pepper
- 100 g of chopped parsley
- 100 g of butter
Method
- In a large pot, sauté the wild boar meat with olive oil and garlic until well cooked.
- Add the onions, carrots, and celery, and cook for 10 minutes.
- In another pot, bring the meat broth to a boil and then add the beans.
- In a separate pan, cook the pappardelle until al dente.
- While the pasta is cooking, mix the bean broth with butter and parsley.
- Combine the pasta with the meat and broth, and stir well.
- Serve hot, seasoned with salt and pepper to taste.
