A traditional Tuscan dish, Wild Boar in Vin Santo combines the intense flavor of game with the sweet aroma of aged wine.

Ingredients
- 400g of wild boar meat cut into pieces
- 200ml of Vin Santo
- 2 onions
- 2 cloves of garlic
- 200g of pancetta
- 100g of Parma ham
- 200g of potatoes
- 100g of carrots
- 50g of parsley
- salt and pepper to taste
- extra virgin olive oil
- 2 mint leaves
Method
- In a large pot, heat the oil and sauté the onions and garlic until they turn golden brown.
- Add the pancetta and Parma ham, sauté for a few minutes.
- Add the pieces of wild boar and cook over medium heat for 15-20 minutes, until the meat is tender.
- Pour in the Vin Santo, add the potatoes and carrots, cover, and cook over medium heat for 30-40 minutes, until the vegetables are soft.
- Finally, add the parsley, salt, and pepper, mix well, and add the mint leaves.
- Let it warm up for a few minutes before serving.
