Ingredients

  • 400g of wild boar meat cut into pieces
  • 200ml of Vin Santo
  • 2 onions
  • 2 cloves of garlic
  • 200g of pancetta
  • 100g of Parma ham
  • 200g of potatoes
  • 100g of carrots
  • 50g of parsley
  • salt and pepper to taste
  • extra virgin olive oil
  • 2 mint leaves

Method

  1. In a large pot, heat the oil and sauté the onions and garlic until they turn golden brown.
  2. Add the pancetta and Parma ham, sauté for a few minutes.
  3. Add the pieces of wild boar and cook over medium heat for 15-20 minutes, until the meat is tender.
  4. Pour in the Vin Santo, add the potatoes and carrots, cover, and cook over medium heat for 30-40 minutes, until the vegetables are soft.
  5. Finally, add the parsley, salt, and pepper, mix well, and add the mint leaves.
  6. Let it warm up for a few minutes before serving.
