Ingredients

  • 1 kg of beef, mutton, or veal, cut into pieces
  • 2 kg of vegetables (cabbage, onion, potatoes, carrots, celery)
  • 1 liter of meat broth
  • 2 onions
  • 2 cloves of garlic
  • 200 g of lentils
  • 1 chili pepper
  • 1 tablespoon of chili powder
  • 1 tablespoon of parsley
  • Salt and pepper to taste

Method

  1. In a large pot, sauté the garlic and onions in some oil over medium heat.
  2. Add the meat and brown on moderate heat.
  3. Add the vegetables, meat broth, chili pepper, and lentils.
  4. Bring to a boil, cover, and simmer on low heat for 2-3 hours, or until the meat is tender.
  5. Turn off the heat, add the parsley, and serve the cawl hot in warm bowls.
  6. Serve with bread or toast.

The story

Cawl is a traditional Welsh dish that dates back to Viking times, originally made with sheep meat and local vegetables.
