Welsh Cawl
A hearty and nutritious meat and vegetable stew, typical of Wales.

Ingredients
- 1 kg of beef, mutton, or veal, cut into pieces
- 2 kg of vegetables (cabbage, onion, potatoes, carrots, celery)
- 1 liter of meat broth
- 2 onions
- 2 cloves of garlic
- 200 g of lentils
- 1 chili pepper
- 1 tablespoon of chili powder
- 1 tablespoon of parsley
- Salt and pepper to taste
Method
- In a large pot, sauté the garlic and onions in some oil over medium heat.
- Add the meat and brown on moderate heat.
- Add the vegetables, meat broth, chili pepper, and lentils.
- Bring to a boil, cover, and simmer on low heat for 2-3 hours, or until the meat is tender.
- Turn off the heat, add the parsley, and serve the cawl hot in warm bowls.
- Serve with bread or toast.
The story
Cawl is a traditional Welsh dish that dates back to Viking times, originally made with sheep meat and local vegetables.
