A delightful ice cream with an Australian earthy flavor, made with wattle seeds from Canberra.

Ingredients
- 200g wattle seeds
- 250ml milk
- 150ml cream
- 100g sugar
- 1 teaspoon vanilla extract
- 1 teaspoon wattle extract
- 1 teaspoon caster sugar
- Sugar for decoration
Method
- In a saucepan, mix the wattle seeds with the milk and sugar, bringing to a boil over medium heat.
- Once boiling, let it cool down and strain to remove the seeds.
- In a bowl, mix the cream, sugar, and vanilla and wattle extracts.
- Add the strained milk and mix well.
- Let the mixture cool down and then place it in a freezer for at least 4 hours.
- Before serving, decorate with a few drops of wattle extract and a sprinkle of caster sugar.
- Serve cold and enjoy the delicious taste combination.
