A Rotorua culinary classic, the Venison Sausage Roll is crispy and flavorful, perfect for a family lunch.

Ingredients
- 200 g of venison
- 100 g of bacon
- 100 g of cooked ham
- 50 g of olive oil
- 1 onion
- 1 garlic clove
- 1 egg
- 100 g of stale bread
- 200 g of bread crumbs
- Salt and pepper
- 12 sheets of filo pastry
- 2 eggs
Method
- Beat the egg, add the stale bread and the egg, mix well.
- In a pan, sauté the onion and the garlic in olive oil.
- Add the venison, cooked ham, and bacon, cook over medium heat for 10 minutes.
- Place the filo sheets on a surface, spoon the meat mixture over half of a sheet and roll up into a sausage roll.
- lightly beat the egg and dip the rolls in the egg, then wrap them in filo.
- Bake in a baking dish with olive oil for 20 minutes at 180°C.
