Tyrokafteri (spicy cheese spread)
A classic of Cretan cuisine, Tyrokafteri is a creamy and spicy spread that is typically enjoyed with bread.

Ingredients
- 200 g of goat feta cheese
- 100 g of sheep feta cheese
- 2 very red onions
- 100 g of dried tomatoes
- 50 g of zucchini
- 100 g of red bell peppers
- 2 tablespoons of extra virgin olive oil
- 1 tablespoon of sugar
- 1 tablespoon of wine vinegar
- salt and pepper to taste
- 1 tablespoon of red pepper flakes
- 1 tablespoon of chopped parsley
Method
- Peel and dice the onions and sauté them in a bit of oil until they become golden.
- Peel and dice the zucchini and red bell peppers, and add them to the onions.
- Dice the dried tomatoes and add them to the onions and vegetables.
- Add the goat feta and sheep feta cheeses, mix well and let it cool down.
- Grind the red pepper flakes and mix them with the sauce.
- Turn off the heat and add the sugar and wine vinegar, mix well.
- Toast the parsley in a bit of oil and add it to the sauce, mix and serve with bread.
