A traditional Northern Nigerian dish, Tuwo Shinkafa is a delightful blend of rice and almonds.

Ingredients
- 200g of rice
- 100g of almonds
- 1 liter of water
- 1 tablespoon of palm oil
- Salt to taste
- 1/2 onion
- 1 chili pepper
- 200g of sweet potatoes
- 100g of zucchini
- 1 tablespoon of Guinea pepper
Method
- Rinse the rice and let it drain.
- Toast the sliced almonds in a pan with palm oil over medium heat for 5 minutes.
- Add water and salt, bring to a boil.
- In another pan, cook the diced sweet potatoes and zucchini.
- Add the rice to the pan with the vegetables and stir well.
- Cook over medium heat for 15-20 minutes, adding chili pepper and Guinea pepper.
- Serve hot.
