Ingredients

  • 200 g of calf liver
  • 2 onions
  • 2 garlic cloves
  • 2 dried dates
  • 1 tablespoon of chili pepper
  • 1 tablespoon of sugar
  • 1 tablespoon of olive oil
  • Salt to taste
  • Pepper to taste

Method

  1. Clean the liver and cut it into equal-sized pieces.
  2. Peel and finely chop the onions and garlic.
  3. In a pan, sauté the onions and garlic in olive oil.
  4. Add the liver and cook over medium heat until it turns golden brown.
  5. Add the dried dates, chili pepper, and sugar, stirring well.
  6. Season with salt and pepper, and cook for an additional 5-10 minutes over medium-low heat.
  7. Serve hot, accompanied by bread or rice.

Kebda Tunisienne is a traditional North African dish, primarily found in Tunisian cuisine. Originally a dish for the elite, it has since become popular among common families.
