Tunisian Liver

A traditional Tunisian dish made with liver, roasted with aromatic spices.

Ingredients
- 200 g of calf liver
- 2 onions
- 2 garlic cloves
- 2 dried dates
- 1 tablespoon of chili pepper
- 1 tablespoon of sugar
- 1 tablespoon of olive oil
- Salt to taste
- Pepper to taste
Method
- Clean the liver and cut it into equal-sized pieces.
- Peel and finely chop the onions and garlic.
- In a pan, sauté the onions and garlic in olive oil.
- Add the liver and cook over medium heat until it turns golden brown.
- Add the dried dates, chili pepper, and sugar, stirring well.
- Season with salt and pepper, and cook for an additional 5-10 minutes over medium-low heat.
- Serve hot, accompanied by bread or rice.
The story
Kebda Tunisienne is a traditional North African dish, primarily found in Tunisian cuisine. Originally a dish for the elite, it has since become popular among common families.
