Tripas à Moda de Lisboa

A traditional Portuguese dish that combines tripe, vegetables, and spices in a hearty broth.

Ingredients
- 500g of tripe
- 2 carrots
- 2 onions
- 1 liter of beef broth
- 2 cloves of garlic
- 1 red bell pepper
- 1 yellow bell pepper
- 1 green bell pepper
- 1 lemon
- 1 tablespoon of balsamic vinegar
- 1 tablespoon of tomato sauce
- Salt and pepper to taste
- 100g of turnip greens
Method
- Clean and cut the tripe into small pieces.
- In a large pot, sauté the onions and garlic in a bit of oil.
- Add the carrots, bell peppers, and tripe, and cook for 10-15 minutes.
- Pour in the beef broth and bring to a boil. Reduce the heat and simmer, covered, for 1-2 hours.
- Add the turnip greens and cook for another 10-15 minutes.
- Cut the lemon in half and add the juice and balsamic vinegar.
- Season with salt and pepper, and serve hot.
The story
Tripas à Moda de Lisboa is a dish that dates back to the days of maritime trade, where tripe was an important part of the diet for sailors. Today, it is a beloved dish throughout Lisbon.
