Ingredients

  • 500g of tripe
  • 2 carrots
  • 2 onions
  • 1 liter of beef broth
  • 2 cloves of garlic
  • 1 red bell pepper
  • 1 yellow bell pepper
  • 1 green bell pepper
  • 1 lemon
  • 1 tablespoon of balsamic vinegar
  • 1 tablespoon of tomato sauce
  • Salt and pepper to taste
  • 100g of turnip greens

Method

  1. Clean and cut the tripe into small pieces.
  2. In a large pot, sauté the onions and garlic in a bit of oil.
  3. Add the carrots, bell peppers, and tripe, and cook for 10-15 minutes.
  4. Pour in the beef broth and bring to a boil. Reduce the heat and simmer, covered, for 1-2 hours.
  5. Add the turnip greens and cook for another 10-15 minutes.
  6. Cut the lemon in half and add the juice and balsamic vinegar.
  7. Season with salt and pepper, and serve hot.

Tripas à Moda de Lisboa is a dish that dates back to the days of maritime trade, where tripe was an important part of the diet for sailors. Today, it is a beloved dish throughout Lisbon.
