Ingredients

  • 4 lbs potatoes
  • 3 tablespoons salt
  • oil for frying
  • 1 tablespoon vinegar
  • 1 tablespoon sugar
  • salt to taste
  • oil for serving

Method

  1. Peel and slice the potatoes into rounds about 1 cm thick.
  2. In a bowl, mix the salt with vinegar and sugar.
  3. Soak the potato slices in the salted vinegar for 10-15 minutes.
  4. After soaking, pat the slices dry with paper towels.
  5. Fry the potato slices in plenty of hot oil until golden brown.
  6. Drain and let cool slightly before cutting them in half.
  7. Fry the half-slices in hot oil until crispy.
  8. Serve with a sprinkle of salt and some oil on the side.
