A delightful appetizer made from marinated onions in vinegar and spices, typical of the city of Tabriz in Iran.

Ingredients
- 2 kg of onions
- 1 lt of white wine vinegar
- 2 tablespoons of sugar
- 1 tablespoon of salt
- 1 tablespoon of pepper
- 1 tablespoon of cumin
- 1 tablespoon of coriander
- 1 tablespoon of cayenne pepper
- 1 tablespoon of black pepper
- 1 teaspoon of Sichuan pepper
- 1 teaspoon of chili flakes
- 1 teaspoon of ground ginger
Method
- Carefully clean the onions and slice them thinly.
- In a large pot, mix the vinegar, sugar, salt, pepper, cumin, coriander, cayenne pepper, black pepper, Sichuan pepper, and chili flakes.
- Add the onion slices and mix well.
- Cover the pot and let it marinate for at least 24 hours.
- Arrange the onion slices on a serving platter and pour the torsh syrup over them.
- Serve cold as an appetizer or as a side for heavy dishes.
