Ingredients

  • 200g of polenta
  • 500g of mountain lamb
  • 300g of onion
  • 200g of lard
  • 500ml of lamb broth
  • 100g of Nus cheese
  • 200g of potatoes
  • 200g of lentils
  • 100g of scallions
  • 100g of parsley
  • salt and pepper to taste
  • olive oil

Method

  1. In a pot, cook the potatoes with lamb broth and salt.
  2. Cut the mountain lamb into small pieces and the lentils into smaller pieces.
  3. In a pan, melt the lard and sauté the onion and garlic.
  4. Add the mountain lamb and lentils, cook over medium heat for 20 minutes.
  5. In a casserole, cook the polenta with a bit of lamb broth and salt.
  6. Add the polenta to the broth with the lamb and lentils, mix well.
  7. Finally, add the Nus cheese, lentils, scallions, and parsley, mix well and serve hot.
  8. Finish with a drizzle of olive oil.
