Ingredients

  • 250g of Topfen (soymilk cheese)
  • 100g of sugar
  • 100g of pulled sugar
  • 1/2 cup of raisins
  • 1 cup of candied fruit
  • 2 eggs
  • 1/2 cup of flour
  • 1/2 cup of sugar
  • 3 packets of baking powder
  • 1/4 cup of oil
  • 1/2 cup of milk
  • 1 packet of vanilla extract

Method

  1. Prepare the Topfen by mixing the soymilk cheese with sugar, oil, and milk to create a smooth cream.
  2. In a bowl, separate the eggs, add flour, sugar, and vanilla extract, then mix in the prepared Topfen cream.
  3. Stir well until you get a homogeneous mixture.
  4. Prepare the puff pastry and let it rest for 15 minutes.
  5. Form a disk of puff pastry, cover with the Topfen mixture, add the raisins and candied fruit.
  6. Cover with another puff pastry disk and bake in the oven at 180°C for 30-35 minutes.
  7. Let it cool before serving.
