A traditional Austrian sweet, the Topfenstrudel is a creamy cheese strudel rich in flavor and soft in texture.

Ingredients
- 250g of Topfen (soymilk cheese)
- 100g of sugar
- 100g of pulled sugar
- 1/2 cup of raisins
- 1 cup of candied fruit
- 2 eggs
- 1/2 cup of flour
- 1/2 cup of sugar
- 3 packets of baking powder
- 1/4 cup of oil
- 1/2 cup of milk
- 1 packet of vanilla extract
Method
- Prepare the Topfen by mixing the soymilk cheese with sugar, oil, and milk to create a smooth cream.
- In a bowl, separate the eggs, add flour, sugar, and vanilla extract, then mix in the prepared Topfen cream.
- Stir well until you get a homogeneous mixture.
- Prepare the puff pastry and let it rest for 15 minutes.
- Form a disk of puff pastry, cover with the Topfen mixture, add the raisins and candied fruit.
- Cover with another puff pastry disk and bake in the oven at 180°C for 30-35 minutes.
- Let it cool before serving.
