Ingredients

  • 500g of pork (pork shins or pork belly)
  • 200g of shiitake mushrooms
  • 1 onion
  • 2 carrots
  • 2 Chinese cabbage leaves
  • 2 scallions
  • 2 red bell peppers
  • 1 garlic clove
  • 200ml of sake
  • 1 liter of chicken broth
  • 2 shiso leaves
  • Salt and pepper to taste

Method

  1. First, simmer the pork in boiling water for 10 minutes, then remove and drain it.
  2. In a pot, sauté the garlic and onion in a bit of oil, then add the carrots, Chinese cabbage, bell peppers, and scallions.
  3. Add the pork and sake, let it boil for 5 minutes.
  4. Add the chicken broth and bring to a boil, then reduce heat and let it simmer for 30 minutes.
  5. Add the shiitake mushrooms and shiso leaves, let it cook for another 10 minutes, season with salt and pepper.
  6. Serve hot, garnished with fresh shiso leaves.

The story

Tonjiru originated in Kyoto, long considered a luxury dish, primarily enjoyed by nobles and wealthy families.
