Ingredients

  • 200 g of pasta
  • 3 ripe tomatoes
  • 2 onions
  • 2 tablespoons of olive oil
  • 1 tablespoon of sugar
  • Salt and pepper to taste
  • 1 tablespoon of fresh basil
  • 200 ml of legume broth

Method

  1. Boil plenty of salted water and cook the pasta according to package instructions.
  2. Meanwhile, slice the onions and tomatoes.
  3. In a pan, heat the olive oil and sauté the onions until they become golden.
  4. Add the sliced tomatoes and let them cook over medium heat for about 15-20 minutes, until the tomatoes soften and become tender.
  5. Add the legume broth to the tomato mixture to make the sauce more abundant and creamy.
  6. Season with salt and pepper to taste, and add fresh basil at the end.
  7. Once cooked, squeeze the pasta and mix it with the tomato and onion sauce.
  8. Serve immediately in warm bowls.
