Tomato and Carrot with Potatoes

A classic Dutch dish, Hutspot is a delightful mix of potatoes, carrots, and tomatoes.

Ingredients
- 400g potatoes
- 200g carrots
- 400g tomatoes
- 2 onions
- 2 tablespoons of sugar
- 1 teaspoon of black pepper
- 1 teaspoon of salt
- 2 tablespoons of olive oil
- 100g bacon or ham
- 2 tablespoons of brown sugar
- 1 teaspoon of thyme
Method
- Peel and cut the potatoes into cubes, slice the carrots thinly, and slice the onions into rounds.
- In a pan, sauté the olive oil with the onions until they become golden brown.
- Add the potatoes and carrots, and cook over medium heat for about 20 minutes, stirring occasionally.
- Add the cubed tomatoes, black pepper, salt, sugar, and thyme. Cook for another 10 minutes.
- Finally, add the bacon or ham and cook for another 5 minutes.
- Serve hot, garnishing with a drizzle of olive oil and some chopped parsley.
The story
Originally prepared during the Carnival fasting period when meat and dairy were forbidden, Hutspot is now a popular dish during Christmas and New Year celebrations.
