Ingredients

  • 400g potatoes
  • 200g carrots
  • 400g tomatoes
  • 2 onions
  • 2 tablespoons of sugar
  • 1 teaspoon of black pepper
  • 1 teaspoon of salt
  • 2 tablespoons of olive oil
  • 100g bacon or ham
  • 2 tablespoons of brown sugar
  • 1 teaspoon of thyme

Method

  1. Peel and cut the potatoes into cubes, slice the carrots thinly, and slice the onions into rounds.
  2. In a pan, sauté the olive oil with the onions until they become golden brown.
  3. Add the potatoes and carrots, and cook over medium heat for about 20 minutes, stirring occasionally.
  4. Add the cubed tomatoes, black pepper, salt, sugar, and thyme. Cook for another 10 minutes.
  5. Finally, add the bacon or ham and cook for another 5 minutes.
  6. Serve hot, garnishing with a drizzle of olive oil and some chopped parsley.

The story

Originally prepared during the Carnival fasting period when meat and dairy were forbidden, Hutspot is now a popular dish during Christmas and New Year celebrations.
