Tom Yam Kung

Ingredients
- 400g of fresh shrimp
- 200g of sea lemon skewers
- 2 dried red chili peppers
- 2 red onions, chopped
- 2 tablespoons of coconut water
- 1 sea lemon, squeezed
- 1 tablespoon of shiitake mushroom extract
- 2 scallions, chopped
- 2 tablespoons of coconut oil
- 2 tablespoons of soy sauce
- 2 tablespoons of lemon juice
- salt and pepper to taste
Method
- In a pot, heat the coconut oil and sauté the red onions and scallions for 5 minutes.
- Add the dried red chilies, chopped onions, and sea lemon leaves, sauté for another 3 minutes.
- Add the shrimp and sea lemon skewers, cook for 2 minutes.
- Add the coconut water, shiitake mushroom extract, soy sauce, and lemon juice, stir well.
- Bring to a boil and cook for 3 minutes, adding salt and pepper to taste.
- Serve immediately in a warm bowl.
