Ingredients

  • 4 sausages
  • 150 g of bread crumbs
  • 3 eggs
  • 100 ml of milk
  • 1 teaspoon of salt
  • 1 teaspoon of pepper
  • 3 tablespoons of oil
  • 1 onion
  • 100 g of parsley
  • 200 g of potatoes
  • 1 teaspoon of sugar
  • 1 teaspoon of mayonnaise

Method

  1. Slice the sausages thinly and set aside.
  2. Beat the eggs with the milk, salt, and pepper.
  3. Add the bread crumbs and mix well.
  4. Dice the onion and sauté it in a pan with oil until golden brown.
  5. Add the sausage slices and cubed potatoes, and cook for about 10 minutes.
  6. In a separate pan, fry the sausage slices in a little oil.
  7. Pour the egg mixture over the vegetables and sausages, and top with the crispy sausage slices.
  8. Cook for another 10-15 minutes or until the egg mixture is golden and crispy.

The story

Toad in the Hole is a regional specialty, particularly popular in Yorkshire, where it was originally made with sausages and Spanish pancake, a type of crispy bread.
