Thiès kebabs are a typical dish from the region, crispy and flavorful, made with beef and spices.

Ingredients

  • 200 g of beef
  • 2 tablespoons of palm oil
  • 2 tablespoons of lemon juice
  • 2 cloves of garlic, minced
  • 1 tablespoon of Guinea pepper
  • 1 tablespoon of ginger, minced
  • 1 tablespoon of coriander
  • 1 tablespoon of black pepper
  • Salt to taste
  • 10-12 skewers for kebabs
  • 1 banana leaf for each kebab

Method

  1. Clean the beef and cut it into similar-sized pieces.
  2. In a bowl, mix the palm oil, lemon juice, minced garlic, Guinea pepper, minced ginger, coriander, black pepper, and salt to taste.
  3. Add the cut beef and mix well to ensure it fully absorbs the spices.
  4. Thread the meat onto skewers with a banana leaf for each kebab.
  5. Grill the kebabs on medium heat for 10-15 minutes, turning every 3-4 minutes to ensure even cooking.
  6. Serve hot, accompanied by a fresh salad or rice.
