Tarte au Sucre
A crunchy sweet tart made with cane sugar and eggs, a traditional treat from the Liège region in Belgium.

Ingredients
- 200 g of sugar
- 3 eggs
- 100 g of flour
- 1 teaspoon of baking soda
- 1 teaspoon of water
- 1 teaspoon of lemon juice
- Pinches of cinnamon
- 1 teaspoon of nutmeg
- Sugar crystals for decoration
Method
- Prepare the sugar mixture: dissolve the sugar in a pan with water, bring to a boil, and let it cool.
- Mix the eggs with the flour, sugar, baking soda, cinnamon, and nutmeg.
- Add the water and lemon juice to the mixture.
- Pour the mixture into a baking dish and bake at 180°C for 20-25 minutes, until it turns golden.
- Let it cool and decorate with sugar crystals.
- Serve cold or at room temperature.
The story
Tarte au Sucre has a history that dates back to the 18th century when farmers in Liège began making this sweet treat using surplus cane sugar.
