Tagliata is a classic Tuscan dish, a raw slice of pork served with a tomato and vegetable sauce.

Ingredients
- 1 piece of tagliata pork (about 2.2 lbs)
- 2 ripe tomatoes
- 1 onion
- 2 cloves of garlic
- 1 tablespoon of extra virgin olive oil
- Salt and pepper
- 1 tablespoon of balsamic vinegar from Modena
- 100 grams of slices of Tuscan bread
- 1 tablespoon of chopped parsley
Method
- Cut the pork into thick slices, not too thin, to allow the flavor to spread.
- Peel and chop the garlic and onion.
- In a pan, sauté the garlic and onion in extra virgin olive oil.
- Add the chopped tomatoes and cook over medium heat until they reduce.
- In a bowl, mix the tomato sauce with balsamic vinegar, salt, and pepper.
- Cut the bread into slices and make a tagliata crust.
- Serve the pork slices with the tomato sauce and garnish with chopped parsley.
- Tagliata is ready to be enjoyed!
The story
Tagliata originated in Siena, where it was served as a midday meal for field workers. Today, it has become a more elegant dish, often served in restaurants as an appetizer.
