  • 4 sweet potato cakes (about 150g each)
  • 1 onion, chopped
  • 2 tomatoes, chopped
  • 1 tablespoon dried chili
  • 1 tablespoon sugar
  • 1 teaspoon salt
  • 1 tablespoon olive oil
  • 1 tablespoon water
  • 1 tablespoon wine vinegar
  • 1 tablespoon chili powder
  • 1 tablespoon smoked onion, chopped
  • 4 tortillas

Method

  1. Prepare the sweet potato cakes and cook until crispy. Let them cool down.
  2. In a bowl, mix the olive oil, water, wine vinegar, salt, sugar, chili powder, and smoked onion.
  3. In a pan, sauté the onion until it turns golden.
  4. Add the tomatoes and dried chili, stirring well.
  5. Cover and cook on low heat for 15-20 minutes, stirring occasionally.
  6. Assemble the tacos by placing a tortilla, a slice of sweet potato cake, and the sauce on top.
  7. Serve immediately.
