Ingredients
- 4 sweet potato cakes (about 150g each)
- 1 onion, chopped
- 2 tomatoes, chopped
- 1 tablespoon dried chili
- 1 tablespoon sugar
- 1 teaspoon salt
- 1 tablespoon olive oil
- 1 tablespoon water
- 1 tablespoon wine vinegar
- 1 tablespoon chili powder
- 1 tablespoon smoked onion, chopped
- 4 tortillas
Method
- Prepare the sweet potato cakes and cook until crispy. Let them cool down.
- In a bowl, mix the olive oil, water, wine vinegar, salt, sugar, chili powder, and smoked onion.
- In a pan, sauté the onion until it turns golden.
- Add the tomatoes and dried chili, stirring well.
- Cover and cook on low heat for 15-20 minutes, stirring occasionally.
- Assemble the tacos by placing a tortilla, a slice of sweet potato cake, and the sauce on top.
- Serve immediately.
