Tacna Adobo
A traditional Tacna dish, uniquely flavored with a perfect blend of spices and meat.

Ingredients
- 1 kg of beef or pork, cut into pieces
- 1 medium onion, chopped
- 2 garlic cloves, minced
- 1 lemon
- 2 tablespoons of tomato sauce
- 1 tablespoon of chili powder
- 1 tablespoon of salt
- 1 tablespoon of sugar
- 2 tablespoons of olive oil
- Water to cover the meat
- 1 bay leaf
- 1 sprig of rosemary
Method
- In a large pot, heat the olive oil and sauté the garlic and onion until golden brown.
- Add the meat and cook for a few minutes until it turns dark in color.
- Add the tomato sauce, chili powder, salt, sugar, lemon juice, broth, and herbs.
- Stir well and bring to a boil, then reduce the heat and simmer on medium heat for 1-2 hours, or until the meat is tender.
- Before serving, ensure the adobo is well combined and add salt if needed.
- Serve hot with bread or as a main course.
