Tabuk Shemali

A delicious crispy rice cake with a slightly sweet taste, typical of the city of Tabuk in Saudi Arabia.

Ingredients
- 300 g of rice
- 200 g of butter
- 1 liter of milk
- 100 g of sugar
- 1 vanilla pod or a vanilla extract
- 1/4 cup of chopped pistachios
- 1/4 cup of chopped almonds
- 1/4 cup of chopped walnuts
- 1/4 cup of chopped pine nuts
- 1/4 cup of semolina
- 1/4 cup of flour
- 1/4 cup of pulled sugar
Method
- In a pot, bring the butter, milk, and sugar to a boil, stirring until the sugar is completely dissolved.
- Add the rice, semolina, and flour, stir well and cook over medium heat for 10-15 minutes, or until the rice is al dente.
- Turn off the heat and add the vanilla, stir well and let it cool.
- In a baking dish, layer the rice and sprinkle with the chopped dried fruits.
- Cover with another layer of rice and repeat until all the ingredients are used up.
- Let the cake cool, then sprinkle with the pulled sugar.
- Bake at 180 degrees Celsius for 15-20 minutes, or until the sugar has melted and the surface is golden.
