Ingredients

  • 500 g of beef
  • 200 g of bacon
  • 2 onions
  • 2 carrots
  • 2 leeks
  • 1 zucchini
  • 1 liter of beef broth
  • 200 g of beans
  • 100 ml of red wine
  • 1 teaspoon of black pepper
  • Salt
  • 300 g of beans
  • 100 g of chopped parsley

Method

  1. In a pan, fry the bacon until it becomes crispy.
  2. Add the onions, carrots, leeks, and zucchini, sauté for a few minutes.
  3. Add the beef in pieces, cook until it is completely tender.
  4. Pour in the beef broth, add the red wine and black pepper.
  5. Boil for 30 minutes, add the beans and cook for another 15 minutes.
  6. Serve the gulyás garnished with chopped parsley.
  7. Serve hot.

Gulyás is a specialty of Hungarian cuisine, but in Transylvania, it has evolved into a particularly robust and aromatic version, reflecting the rich culinary tradition of the region.
