A classic of Hungarian cuisine from Transylvania, the gulyás is a hearty and warm stew, perfect to enjoy on a chilly autumn day.

Ingredients
- 500 g of beef
- 200 g of bacon
- 2 onions
- 2 carrots
- 2 leeks
- 1 zucchini
- 1 liter of beef broth
- 200 g of beans
- 100 ml of red wine
- 1 teaspoon of black pepper
- Salt
- 300 g of beans
- 100 g of chopped parsley
Method
- In a pan, fry the bacon until it becomes crispy.
- Add the onions, carrots, leeks, and zucchini, sauté for a few minutes.
- Add the beef in pieces, cook until it is completely tender.
- Pour in the beef broth, add the red wine and black pepper.
- Boil for 30 minutes, add the beans and cook for another 15 minutes.
- Serve the gulyás garnished with chopped parsley.
- Serve hot.
The story
Gulyás is a specialty of Hungarian cuisine, but in Transylvania, it has evolved into a particularly robust and aromatic version, reflecting the rich culinary tradition of the region.
