A traditional sweet from Kharkiv, Syropopiky, is a delightful compote of raspberries and whipped cream.

Ingredients
- 250 g of fresh raspberries
- 100 g of sugar
- 1 teaspoon of powdered sugar
- 100 ml of water
- 250 ml of fresh cream
- 30 g of powdered sugar
- 1 teaspoon of vanilla extract
- 1 mint leaf
- 1 tablespoon of lemon juice
- 1 teaspoon of water
- 1 teaspoon of powdered sugar
- 1 teaspoon of powdered sugar
Method
- Wash the raspberries and put them in a bowl with powdered sugar and water. Mix well and let it sit for 30 minutes.
- In a saucepan, bring to a boil water with powdered sugar and vanilla extract. Add lemon juice and a teaspoon of water and stir.
- In a pan, bring to a boil the raspberries with powdered sugar and water for 10 minutes, then let it cool down.
- Whip the fresh cream with powdered sugar and a teaspoon of water until it forms a well-mixed cream.
- In a bowl, mix the cooled raspberries with the whipped cream. Add the mint leaf and gently mix.
- Serve immediately, decorating with a bit of powdered sugar and a mint leaf.
