Ingredients
- 250 g of flour
- 4 eggs
- 250 ml of milk
- 100 g of grated cheese
- 100 g of lingonberries cut into cubes
- 50 g of sugar
- 1 tablespoon of cinnamon powder
- oil for frying
- 100 g of sugar for the sauce
- 100 ml of water
- 1 tablespoon of lingonberry juice
- 1 tablespoon of cane sugar
Method
- In a bowl, mix the flour, eggs, milk, grated cheese, sugar, and cinnamon until you get a smooth batter.
- Let the batter rest for 30 minutes.
- In a non-stick pan, fry the pancakes with oil until golden brown.
- In the same pan, add the lingonberry cubes and cook for 2-3 minutes.
- In a small bowl, mix the lingonberry juice, water, and cane sugar, bring to a boil and let it cool.
- Serve the warm pancakes with the lingonberry sauce and grated cheese.
