Swedish Herring Soup

Ingredients
- 4 herrings
- 1 liter of fish broth
- 1 onion
- 2 carrots
- 1 zucchini
- 1 tablespoon of olive oil
- 1/2 cup of white wine
- 1 lemon
- Salt and pepper to taste
- 100 grams of dried tomatoes
- 100 grams of potatoes
Method
- Clean and flatten the herrings, then fry them in a pan with olive oil.
- Add chopped onion and sliced carrots, and sauté for a few minutes.
- Add the fish broth, cubed potatoes, and dried tomatoes, bring to a boil.
- While the broth is boiling, add sliced zucchini and cook for about 10 minutes.
- In a bowl, mix lemon juice, white wine, and fish broth, then add to the mixture above.
- Stir well and taste for salt and pepper, then serve hot.
- Final touch: for a flavor boost, add some chopped parsley.
