A traditional Umbrian dish, strangozzi with wild boar sauce is a delectable pasta served al dente with a robust and aromatic wild boar sauce.

Ingredients
- 300g of strangozzi (long, thin pasta)
- 500g of wild boar in pieces
- 2 onions
- 2 carrots
- 2 celery stalks
- 1 garlic clove
- 200ml of olive oil
- 100g of lard
- 100g of cooked ham
- 100g of beans
- salt and pepper
- 100ml of wild boar broth
Method
- In a pot, salt the water and cook the strangozzi al dente. Drain and set aside.
- In a pan, sauté the garlic and olive oil.
- Add the onions, carrots, and celery, and sauté them for a long time.
- Add the wild boar pieces, lard, and cooked ham, and cook over medium heat for 20-25 minutes.
- Add the beans and wild boar broth, stir well, and heat through.
- Add the strangozzi to the sauce and mix well.
- Serve with a little pepper and a drizzle of olive oil.
