Ingredients

  • 4 snapper fillets
  • 2 onions
  • 2 carrots
  • 1 zucchini
  • 2 tablespoons of red pepper powder
  • 1 tablespoon of red chili
  • 1 red onion
  • 1 lemon
  • 1/2 cup of white wine
  • 200 ml of fish stock
  • 2 tablespoons of olive oil
  • Salt and pepper to taste

Method

  1. Prepare the snapper fillets by trimming the edges and removing the central spine.
  2. In a pan, heat the olive oil and sauté the onions and red onion.
  3. Add the carrots, zucchini, and red pepper powder, sauté for 5 minutes.
  4. Place the snapper fillets in the pan, pour in the white wine and fish stock.
  5. Cover and cook on low heat for 20-25 minutes, checking for absorption of the stock.
  6. Squeeze the lemon and add it to the pan, cook for an additional 5 minutes.
  7. Arrange the snapper fillets on a serving plate, pour over the stock, and garnish with lemon zest.
  8. Season with salt and pepper and serve immediately.
