Stewed Snapper

A delicious fish dish from Port Antonio, Jamaica, stewed with aromatic spices and vegetables.

Ingredients
- 4 snapper fillets
- 2 onions
- 2 carrots
- 1 zucchini
- 2 tablespoons of red pepper powder
- 1 tablespoon of red chili
- 1 red onion
- 1 lemon
- 1/2 cup of white wine
- 200 ml of fish stock
- 2 tablespoons of olive oil
- Salt and pepper to taste
Method
- Prepare the snapper fillets by trimming the edges and removing the central spine.
- In a pan, heat the olive oil and sauté the onions and red onion.
- Add the carrots, zucchini, and red pepper powder, sauté for 5 minutes.
- Place the snapper fillets in the pan, pour in the white wine and fish stock.
- Cover and cook on low heat for 20-25 minutes, checking for absorption of the stock.
- Squeeze the lemon and add it to the pan, cook for an additional 5 minutes.
- Arrange the snapper fillets on a serving plate, pour over the stock, and garnish with lemon zest.
- Season with salt and pepper and serve immediately.
