A traditional Jamaican dish featuring a tender beef fillet and kidney, roasted with vegetables and a savory sauce.

Ingredients
- 4 beef fillets
- 2 pork kidneys
- 2 carrots
- 2 onions
- 2 celery sticks
- 2 scallions
- 1 garlic clove
- 100 ml soy sauce
- 50 ml lemon juice
- 50 ml olive oil
- Salt and pepper to taste
- 100 ml beef broth
Method
- Prepare the pork kidneys by cutting them into pieces and placing them in a bowl.
- Slice the beef fillets, carrots, onions, celery sticks, and scallions.
- Add the chopped garlic to the bowl with the kidneys.
- In a separate bowl, mix the soy sauce, lemon juice, olive oil, salt, and pepper.
- In a pan, heat some oil and cook the beef fillets for a few minutes on each side.
- In another pan, cook the vegetables with the garlic and season with the prepared sauce.
- Assemble the beef fillets with the kidneys and vegetables in a baking dish.
- Pour the beef broth over the top and bake in the oven at 180°C for 45-60 minutes.
- Serve hot, accompanied by sweet potatoes or a salad.
