Ingredients

  • 250 g of flour
  • 100 g of sugar
  • 100 g of butter
  • 2 eggs
  • 1 tablespoon of caster sugar
  • 1 tablespoon of cinnamon
  • 1 tablespoon of vanilla extract
  • 1/2 tablespoon of cardamom
  • 1/2 tablespoon of nutmeg
  • 100 g of cocoa powder
  • 1/2 teaspoon of baking powder
  • 200 ml of milk

Method

  1. In a bowl, mix together the flour, sugar, cinnamon, cardamom, and nutmeg.
  2. Add the baking powder and mix well.
  3. In another bowl, beat the eggs with the butter and milk, then add the caster sugar and vanilla extract.
  4. Add the flour and spices mixed in the first step and gently fold to combine.
  5. Finally, add the cocoa powder and mix until you get a smooth dough.
  6. Shape the speculoos into stars with your hands or a glass and let them rise for 30 minutes.
  7. Fry the speculoos in hot oil over medium heat until they turn golden brown.
  8. Let them cool on a baking paper and serve fresh.

Speculoos originated in West Flanders, Belgium, where they were first made in the 17th century as Christmas cookies.
