Ingredients
- 250 g of hard wheat flour
- 2 eggs
- 300 ml of cold water
- 1/2 teaspoon salt
- Olive oil for frying
- 2 tablespoons of butter
- Salt and pepper to taste
- 1 onion
- 200 g of smoked bacon
- 100 g of grated cheese
Method
- In a bowl, mix the flour, eggs, cold water, and salt until you get a homogeneous dough.
- Cover the bowl with a cotton cloth and let it rest for at least 30 minutes.
- Using a colander, form small balls of dough, then pass them through a sieve to get the spätzle.
- Fry the spätzle in a pan with hot oil until they become golden brown.
- In a skillet, melt the butter and add the oil, then sauté the onion and bacon.
- Add the cheese, mix well, and then add the spätzle.
- Season with salt and pepper to taste and serve hot.
