Ingredients
- 4 cow feet
- 6 onions
- 2 tablespoons of ginger
- 2 red bell peppers
- 200 g of potatoes
- 1 liter of beef broth
- 1 tablespoon of chili powder
- 2 tablespoons of olive oil
- Salt and pepper to taste
- 1 teaspoon of lemon juice
- 2 tablespoons of coriander
Method
- Clean and rinse the cow feet, then boil them for 10 minutes.
- Chop the onions, bell peppers, and potatoes into cubes.
- In a large pot, heat the olive oil and sauté the onions and bell peppers until golden brown.
- Add the chopped ginger and cook for another 2 minutes.
- Add the cow feet, beef broth, salt, pepper, chili powder, coriander, and lemon juice.
- Bring to a boil, cover, and simmer on low heat for 2 hours or until the cow feet are tender.
- Gently mash the cow feet and add the potatoes. Cook for another 30 minutes or until the potatoes are fully cooked.
- Turn off the heat and serve hot.
