Spanish Omelette

A delicious, crispy and flavorful Madrid omelette, made with potato, carrot, and eggs.

Ingredients
- 4 tomatoes
- 3 potatoes
- 2 carrots
- 10 eggs
- 500 g of lard
- salt and pepper to taste
- oil for frying
Method
- Peel and dice the carrots and potatoes into cubes. Cook in a pan with oil and lard until they are soft.
- Slice the tomatoes thinly and add them to the pan with the vegetables.
- In a bowl, mix the eggs with salt and pepper.
- Heat a little oil in a pan and pour the vegetable mixture in. Cook on medium heat until the vegetables are lightly browned.
- Pour the eggs over the vegetables and cook on medium heat until the eggs are almost cooked.
- Using a spoon, lift the tortilla and flip it to cook the other side.
- Serve hot with salt and pepper, or with tomato sauce or green sauce.
